Cake Pops
Prep Time: 1 hour Cook Time: 2 hours Serves: 65
Ingredients
Cake
- 115g unsalted butter, softened
- 2 eggs
- 1/4 cup milk
- 1 tsp vanilla extract
- 135g plain flour
- 1 tsp cornflour
- 1 tsp baking powder
- 165g white sugar
- Pinch of salt
Buttercream
- 115g unsalted butter, softened
- 170g icing sugar
- 15g cream or milk
- 1 tsp vanilla extract
- Punch of salt
Chocolate
- 400g chocolate
- 2 tsp vegetable or coconut oil
- ~65 cocktail skewers
Instructions
Cake
- Preheat the oven to 180C or 160C fan forced
- Butter an 8” cake pan and line the base with baking paper
- Whisk together the eggs, milk, and vanilla in a small bowl
- Mix together the flour, cornflour, baking powder, sugar, and salt in a large bowl
- Use a stand mixer or hand mixer to beat the butter into the dry ingredients, 1/2 of the butter at a time
- Beat the wet ingredients into the dry ingredients, 1/2 at a time, until completely smooth
- Pour into the cake pan and bake for ~30 minutes, or until a skewer comes out clean
Buttercream
- While the cake is baking, prepare the buttercream
- Beat the butter until soft and fluffy
- Add the cream, vanilla, and salt, and beat until combined
- Add the sugar in three batches, beating in between, until fully combined and fluffy
Assembly
- When the cake is fully cooled, crumble it into a large bowl
- Add the buttercream and beat using a stand mixer or hand mixer until fully combined
- Form the mixture into balls of about 20g each and place them on a tray lined with baking paper
- Chill for at least 30 minutes in the fridge
Chocolate
- Melt the chocolate using a double boiler or microwave. Using a mug is better than a bowl, as the chocolate will be deeper for dipping
- Mix in the vegetable or coconut oil to make the chocolate thinner and easier to dip into
- Dip the cocktail skewers into the chocolate and then insert them into the cake balls, about half way
- Once the sticks are set in place, dip the cake pops into the melted chocolate, tapping off any excess
- If possible, the cake pops should be set standing up with the skewers inserted into a styrofoam block or cardboard box. If that is not possible due to the shape of the sticks, then they can be set “upside down” on baking paper with the sticks sticking up.
- Store in the fridge :)
